If views are your thing, then choose a good window seat. First, I check the flight route the airline will be taking to my destination. Most airlines have a page on their site that allows you to view the routes. For example, when flying to the west coast from Austin, the best views are on the right side of the plane (looking north). However, a direct route from Austin to Denver will put the mountains on the left side of the plane (looking West).
Then, before actually booking my flight, I'll check the available seats on SeatGuru.com (seriously, the best way to choose your seats) which gives reviews on seating types and even specific seats, it's a fantastic tool! If you are flying Southwest Airlines, note that they don't have assigned seating so be sure to sign up for Early Bird Check In or upgrade to Business Select to get the best choice of seats.
